I really shouldn't juggle much any these days (boo!) but throwing splits (two or more balls/clubs/whatever thown from one hand and caught in more than one) is just so much fun. some of my favourite patterns at the moment are based on two balls rather than three..

(and photographing the process? near impossible.....)

Made to (almost, I didn't have cream) the recipe from L'Artisan du Chocolat. Took an hour and a bit. It seems the secret is in the cooling-reheating process somewhere.

the science bit
