Kiri Malu - Sri Lankan fish curry
4 large firm white fish steaks or fillets (king fish ideally but
salmon will suffice)
e.g. salmon or seer fish, choose fish that doesn't flake
1 tsp ground turmeric
0.5 tsp salt
1 tsp fenugreek seeds
1 medium onion, finely sliced
2 cloves garlic, finely chopped
8 curry leaves
Cock brand coconut milk powder (1.5 cups thin coconut milk & 0.5 cup thick coconut milk)
lemon juice to taste
Soak fenugreek seed for 30mins. Rub fish steaks all over with turmeric.
When ready, start cooking fenugreek, onion, garlic, salt, curry
leaves, lemongrass, and thin coconut milk in a large saucepan. Simmer
gently until onions are soft.
Stir well and add fish. Simmer again for 10 mins.
Add thick coconut milk and heat gently for a few minutes longer.
Remove and add lemon juice to taste. Serve with string hoppers and
sambols (that's teh roange stuff)!
