Lemon juice ravioli on chocolate soil. Getting better at this. Bit scrappy at the back there, but was great in the mouth.
Calcium lactate dissolved in lemon juice/water mix, frozen into hemispheres and dunked into alginate bath for 1 min (ish) and then into warm water bath to finish defrosting. Frozen so they're denser than the alginate and easier to handle.
Dyed green because I'm bored of yellow.

Ohmigosh, it's dessert for two.
Chocolate and almond soil with (from top): crystallised rosemary; candied lemon/lime zest; strawberry milkshake pearls; ginger custard; earl grey ganache pyramids topped with lemon salt and fructose; caramelised white chocolate with crystallised sage leaves; lime and ginger wine gel.
